You are right on track with the rigging. I usually Carolina rig and add a bead over the swivel to protect the knot. The size of the weight will depend on the current and depth you are fishing. Sometimes a light weight can allow your bait more movement.
Here's a tip that a lot of people don't think about ... try rigging from the bottom of the bait between the middle and tail fin. The bait swims up from the bottom, so rigging under the bait will allow for better movement.
